Preserving the taste of summer 3

Today was a terribly productive day, so I rewarded myself by using up some lemons and making lemon curd. It seems to be a fiddly recipe, but I have ingested a full pot of coffee and am rearing to get at it!!!

All set to go:

Got my ingredients out and organized…got my pots on the stove…Mixed up 2 egg yolks and 4 eggs instead of 4 egg yolks and 2 eggs(….grumble…something about reading directions…) 4 egg yolks, 2 eggs and a frittata for tomorrow.

It took forever to cook the curd, so I probably had my heat completely wrong…but in the end I ended up with a gorgeous lemon curd (or lemon butter if you will…) I’ll check the seals tomorrow and be all set! With pie pastry in the freezer and lemon curd in the cupboard, I’ll never be frantic if last-minute company arrives!!!
